I made my two bookings online and it only gave me the choice to ask if I wanted connecting rooms which I asked for.

Do I need to ask for a room with one of those small beds in it (the junior Murphy bed)? I have four booked in the room but one is a teen son and then my daughter so I need that bed..or at least to request it.

If you only have 4, there's no guarantee that they will give you a room with a Murphy bed. If you want to request one you will have to phone to have that request added to your reservation.

Agree. Those rooms are given to families of 5 first. You can request and may get lucky but would need a backup plan should you not get one.

Maybe I should change my bookings then. I could do one room with two adults and three kids and them put another single adult in the other room. That might work better.

You could, but be aware there is no guarantee that the 2 rooms would be anywhere near each other. They could be in different buildings across the resort.
You can request connecting or adjoining rooms, but they are just that a request. And no matter what they tell you they are never guaranteed.
Good Luck
