While definitely sky-high in the calorie department, we made "Red, White, and Bleu Potato Salad" for the 4th and received numerous raves about it. I'm not usually a fan of bleu cheese, but this really was good. We made it after tasting at a potluck a few weeks ago where it was also being raved about. It's a pretty simple recipe and since it tastes best if made ahead, you could put it together the day before and then not worry about it anymore.
20 small red potatoes, skin on
1 small red onion, chopped
1 package (6 oz) bleu cheese, crumbled
1 package bacon, cooked, crumbled
Mayo to taste
Boil the potatoes until completely cooked/soft. Let cool and chop into bite size pieces. The onion can be very over powering and you may consider using ½ - ¾ of it. Mix all ingredients in a large bowl and chill for an hour.
