Are there any tables where you can have a full view of the fireworks and projections? We were planning to stay and watch them after F!, but now F! is canceled.
Not really. There are a lot of trees plus umbrellas. Plus, it would be rude to take up a table there for that. The restaurant remains open during fireworks and people need to have somewhere to sit down to eat.
There are on the outside spots you could watch the show from, you do have to show up very early to do this and could check during the day and sit down and see which seats are at a view you'd enjoy
I've done it before a long time ago, its not perfect but I did enjoy having a seat
The issue is I am taking my niece for the first time. She is 8 years old and very short. I am not sure where the best place to watch is where she can see it all.

Back by It’s a Small World standing up on the raised area would likely be a great option. You’ll be able to see the projections really well as well as the big fireworks. In front of the castle is really the only place for a child to be able to see absolutely everything, but the time investment to save those seats would be rough if it’s just the two of you.
