Jody's moving to The Beach 03/15/04!

I've stopped posting my food journals again but just wanted to report that I've completed 9 days cheat FREE and am hoping that THIS week I'll finally show a little drop in the scale.

2 bacon/egg/cheddar/onion [no bread]
couple pecans [I was starving]
Chinese Buffet - I had a big serving of the grilled meat/veggies
and then some steamed shrimp and crab legs
I ended with sucking the cheese filling out of a crab ragoon! LOL!

Sunday
This day is always hard as we go to the high carb queen - MIL!
Omelet w/onion,ham,cheese,tomatoe
salad w/ceaser dressing/onion/burger/parmesan

I have lost 4 pounds over this two week cheat free period. I am doubtful that I will make my ONDERland by Christmas goal though -- as I was 211 this morning. I'm still not sure about Thanksgiving. I'm planning on making a low carb pumpkin cheesecake plus my whipped cauliflower to contribute to the meal.

Your low carb pumpkin cheese cake sounds yummy. Which recipe are you using?

I'm also doubtful about ONDERland by Christmas. I have 7 pounds to lose and have only maintained or lost a half pound the last few weeks. We can keep trying, though, but I won't drive myself crazy if it doesn't happen on time.

Pumpkin Layer Cheesecake

Ingredients:

Filling:

2 pkg (8 oz each) Cream Cheese, softened
1/2 cup Splenda
1/2 tsp Vanilla
2 eggs
1/2 cup canned pumpkin
1/2 tsp ground cinnamon
Dash each of ground cloves and nutmeg (I used Pumpkin Pie spice)

Crust:
(instead of a graham cracker crust)

1 1/2 cups chopped pecans
3 tbsp butter
1 tsp Splenda

How to Prepare:

Crust:

Melt the butter and mix it with the Splenda and chopped pecans. Press the mixture into a 9 inch pie pan. I pressed it into the bottom and as far up the sides as I could. Bake the crust in a 350 degree oven for about 8-9 minutes.

Filling:

Mix softened cream cheese, Splenda, and vanilla until well blended. Add eggs and mix until smooth.

Set aside 1 cup of the batter, spoon the rest of the batter into the crust. (Be careful not to "disturb" the pecans too much!)

Mix the pumpkin, spices and 1 cup of batter together, spread on top of the plain batter (there's where you get your pumpkin layer.)

Bake in a 350 degree oven for 35 - 40 minutes until the center is almost set. Cool, and refrigerate for at least 3 hours.

Carbs Per Serving: ECC: 5.2 grams

I get requests for this recipe by non-LCers for holiday parties!

I serve with whipped cream.

I can't believe it -- but I DID IT -- and it feels oh so good to stay in control -- even on a HOLIDAY!

Thanksgiving
We went to Friendly's for breakfast and I had the most awesome steak fajita omelet. I had 1/2 of it at breakfast and saved the other 1/2 for mid afternoon.

Dinner tonite at MIL's [remember -- the carb queen's place]. I had a larger serving of Turkey, Mashed Cauliflower [which I brought along], and a small serving [couple bites] of sweet potatoe. I passed on the mashed potatoes, filling, corn, lima beans, chow chow, cranberry sauce, pumpkin pie, fruit salad, pumpkin bread... on and on! For dessert I made a low carb pumpkin cheesecake [I have it posted in the Hearth]. It was actually very good --- and more of my sugar free dessert was eaten than all of the other desserts combined! Everyone liked it.

I am feeling very full and bloated tonite. I did eat more in quanity than I've been use to eating BUT I stayed low carb and I am so proud of myself!

Next step is low carb until Christmas ---- but NOT THRU Christmas Day. I will have some of the families stuffing on Christmas --- I look forward to that every year! But until then --- cheat free for me!:tongue:
 
I am VERY frustrated! After being cheat free for 21 days - I GAINED 2 pounds this week! Something isn't right

week one -- stayed the same
week two -- down 4 pounds
week three -- UP 2 pounds

I've been eating mostly meat and low carb veggies. With eggs about twice a week and the occasional 'carb smart' klondike bar or sugar free pieces of candy. I also had a sugar free cheesecake for Thanksgiving and the day after a piece too. I've been doing 'low carb' for a year and a half so I DO know what I'm doing. To be honest --- if anything, some days I don't get ENOUGH calories in because I'm just not hungry. I certainly am NOT worried about eating too much. I do NOT get my water in like I should. And the only other down fall that I can think of is I usually have some sort of cheese every day. I've decided to go to the doctor and ask to have bloodwork done -- I'm going to make the appointment today.

Jody, here's a :hug: for you, sweetie!! You've been doing so well! I know it's hard when the scale seems to turn against you. :( I like the idea of checking with your doctor - maybe some thyroid tests are in order?? I've looked at your journal and often wondered if you're getting enough calories and enough fat, but you've been at this for a while so I trust you know your body and what it needs.

Hang in there, Jody! You'll figure it out. You probably just need a little tweak and things will start moving right along for you. In the meantime, you're feeding your body such healthy food and NOT that carb poison that will make you age faster and feel awful and can lead to many other health problems. Celebrate all the good things you're doing for you, even when the scale isn't moving.

I'm sheeplishly peeking in the door to say hello to everyone! I'm still on program -- at least 95% of the time and maintaining. Haven't had any real losses though in quite a while. A couple months ago I was under alot of tests for thyroid, etc. And it showed up as 'borderline'. I have a goiter and have to get it checked in a couple months again.

I'm still tredging on ----- and thought I would check in a little more often. I may even begin to food journal here again --- it always is very helpful to me.

Sorry to hear that your loss isn't going quickly but the borderline thyroid condition could have LOTS to do with that.

However, your body will still do better on healthy food than it will on junk so you've been doing the right thing by staying on plan.

Hope to see you around here more! I miss you when you're gone too long! ::yes::

It's nice to see you checking in. I know what it's like to have a thyroid problem. Ever since mine started acting up over 12 years ago, it's been a struggle losing weight (or trying not to gain it).

I haven't lost anything in about 6 weeks now. When you have a thyroid problem (I take medication), your body doesn't seem to send the right signals and/or your metabolism is all screwed up. Nevertheless, I am sticking to plan and haven't cheated. I haven't been exercising which I know is a big part of the problem. Have you been doing any?

Just eating healthier is a good thing. I guess the weight will come off with time. Hang in there.

I know you are probably on other sections of this board, but I hang out here almost exclusively so I haven't seen you in a while.

As you can see by my sig., I haven't lost a ton either. But I think I am on the "losing" side again (it's about time :rolleyes: :) ) We've just got to keep pluggin away, right?? :moped:

You are one of the persons on this board that got me so interested in WISH. And also one of the people that got me re-dedicated to Low-Carb.

You don't realize it, but you are an inspiration on this board and have been sorely missed.

I've been doing pretty good food wise this week. EXCEPT I've over INDULGED in those Atkins Indulge pbutter ice cream bars! I'm glad I ate the last one last night -- they are so OUTAHEAR baby!:tongue:

Tuesday I didn't do so great in the veggie department -- I usually do MUCH better!

Tossed salad w/chicken Salad and basil dressing

Chicken Cheesesteak [no roll]

Strombolli [w/o the crust]

and [too many] ice cream bars!


I will try to do MUCH better today!

hey jody, you don't know me, so i hope it's okay that i'm posting to your journal! i just wanted to stop in and say hi :wave:

isn't it crazy how those "legal" treats can end up being so bad for us? i tend to overdo it sometimes on such things as ff cool whip and jello :p . glad those bars are finished off! now you don't have to worry about them ::yes::

otherwise, looks like you're right on track. keep up the great work :bounce:

I'm glad the treats are gone - time to get back to basics! It's getting warmer so we'll have to start walking outside. If you need a walking buddy this weekend, let me know - even if it's just for a slow mile! ::yes::
