Hi! I did the Dunn's River Falls excursion last year when visiting Jamaica (not on a cruise). You can use a camera but it's highly suggested to use a waterproof one. The photos I believe were $30.
At Dunns River, if you have in any way a decent camera you do not want to get ruined, buy a disposable waterproof camera to take instead.
The guides may offer to carry your camera for you - I chose not to let them and kept mine in a Ziploc bag. Needless to say a bag full of water and an older camera did not mix well though I was able to get the pics taken (while it still worked) off the memory card. Now I have a nice new camera
Also make sure to take water shoes with you. The walk up the falls is leisurely but footwear that will stay on and provide grip is a must. The pictures they try and sell is actually a video the person paired with your guide takes while going up each terrace. Not great quality and 1/3 the video is no more than a commercial for Jamaica but the part of the DVD of walking up (and the other activities they have you do on various sections of the falls) was still a nice reminder of the activity.
Not really, $30. It seemed like a lot for its quality at the time but look how much is spent on the excursion or for pictures that will likely rarely be looked at from Shutters and its not a bad deal for the memories it provides.
No one seems to want to jump in to answer your part of the question dealing with the dolphin encounter so I'll offer a suggestion.
Please read this thread, then you can make an informed decision as to whether you would like to participate in such an activity. http://www.disboards.com/showthread.php?t=3238863&highlight=swim+with+the+dolphins
