I've never done a split stay and am wondering how this would work with booking FP (Beach club/Swan)

We've never done a split stay but I am thinking of doing a 2 night stay at the Beach Club with 5 day hoppers and dining (DH wants it) and then switching to the Swan for 3 nights. (we have points for one free night so would only have to pay for two of them).

But I am unsure how that works when booking FP? on my 60 day for the Beach Club stay can I book my FP for all 5 days or is this going to mess me up and only allow me to book for just the first 2/3 days and then on my Swan check in date I would book the other FP's? This wouldn't allow me to get the hard to get FP at 60+4 or 60+5.

You'll be fine. As long as y our tickets are linked to your MDE account you will be able to book FP+ at 60 days for both stays.
ADR's however, are different. Each stay has its own 180 day mark. So on the first stay you will only be able to book 190 + 2 days
