I'm excited by this news. From what I understand this won't affect most desserts or mickey bars (unless there is some extra trans fat hiding in there that I wasn't aware of - my Haagen Daas doens't have trans fat). I eat lots of steak and potatos at Disney - no real changes there. I think the biggest changes most people will see is in burgers, fries and fried chicken items. Less fatty burgers make me happy - we use lower fat meat at home so no big deal. Nothing tastes like MDonalds fries but MD fries, even at disney unless I'm at the french fry wagon - frying in a different oil is fine with me.
I agree that it is a personal decision whether to eat healthy or not. However, it think it is wonderful that a company that feeds millions of people is putting some thought into what goes into those foods. Disney has some wonderful chefs that I am sure will make food with less trans fat taste great. I've eat some wonderful lower fat foods prepared by fantastic chefs that taste way better than the "real" thing. And again it isn't every single bit of food that is getting reworked. If anything this makes me happier to go to Disney - I can pig out as usualy but with a little less guilt

! Disney has always made everything wonderful and this will be no exception. I am sure the changes to the foods will be a welcomed change and yummy to boot. I would find it hard to believe that a family of 12 would choose not to go to Disney because they can not fill their bellies with fatty food...seems a bit silly to me...but maybe some people only go to Disney to eat. But if all you want out of a vacation is transfat, then I would just stay home and save the money. I know that kids are really having a tough time with being overweight, so I am hoping these changes help them the most. I always feel so terrible for a child struggling with weight....gosh, we have our entire lives to worry about weight, sad to have to deal with it so young.
but if you want me to climb back on...bring up people wanting to smoke in doors...that will get me climbing back up. 
Their is no choice, its the same thing over and over and over for your kids under 10. If your kid wants a desert (besides apples or yogurt) then they will eat ALOT of Mac N Cheese or burgers, way to come out ahead and not feel guilty about it!
it just means that they are switching the oils in which things are fried in order to allow for more polyunsaturated/monounsaturated fats as opposed to trans fats (i.e. the worst for you fats). In fact, most people probably won't even notice a difference...
