Disney sales rep told me that if a promo. offer date ends 5/31 as long as I start my stay on 5/31, I will get the discount rate for my entire stay? I know sometimes you get different answers from different cast members!

If there are rooms/room categories for the promo available at the resort you're staying at, then yes it's true. You just need to make sure that your check in is either before or on the day of the last day of the promo offer.
