There's no such thing as 'normal' when it comes to food. Everyone has different tastes and likes different combinations of flavors.

If it tastes good to you, that's all that matters.

Sounds great to me - I've eaten lots of roast beef sandwiches with just mustard, but I do usually leave out the pickles. This is a relatively 'normal' sandwich to me.

I do like pickles, but just on the side at some meals.
