I searched the disneyland website for Chicken & Waffles and came up with Steak House 55 has this on their menu. You can search anything in the search tool and if they have it at one of their restaurants on the menu it will come up. I did this with French Dip.
No, but there's a Roscoe's just down the street. They did do a special menu item of chicken and Mickey waffles at Plaza Inn for the 24 hour day in 2013. I don't know why they haven't started offering chicken on the breakfast buffet for the character meal, I think people would take a piece.
Paradise Grill's menu just switched today and there is chicken and waffles (chicken dipped in waffle batter) but it isn't on a sandwich. There's a dipping sauce so I'm assuming they're probably strips.

I kinda figured it was because of Corn Dog Castle. I keep hoping they'll bring back my actual paradise grill but alas, I think it's just a random menu from here on out.

Well, it's not the same as Chicken and Waffles, but it's close. I'd like to try it if it's still on the menu next time I get down there. Just something different, filling, and not over $20 a plate. That's all I'm looking for.

I don't mind a rotating menu so much. I actually liked some things for Lunar New Year and F&W. And it was cook that they kept the LNY menu after it closed. A test kitchen, or "off season" holiday items could be a cool concept. But corn dogs and burgers because other places in the park are closed doesn't get me excited.
