is there a central disney kitchen???

i have noticed that even in the more expensive WDW restaurants some of the entrees are repeated other places with slight( like a sauce ) changes. I would expect things like pastries ect to be made in one location but does anyone know how the kitchen(s) operate...is the food prepared on site at the rest.site or partially prepared in a central location? just curious since especially breakfst buffets i recognize the pastry, dishes like the breakfast pizza ect from buffet to buffet with slight changes. i figure if it's pre-made i might as well go to the cheapest option then :) !
 
Each restaurant operates their own kitchen, in some cases baked goods are obtained through an external vendor.

Particularly in the signature restaurants, all food is made fresh to order on premesis when you order and to your taste.

My DH work for "the mouse" ( his words not mine)as a chef
back in the early 80's threw 91 and he told me about a central commissary where lots of things went out to the different restaurants including pizza mashed potatoes pasta thing like that they would make them there bag them and send them out so all the restaurants had to do was boil in a bag.

I think Disney is farming out allot of it restaurant stuff to armark now though :confused3 they have gotten rid of the culinary program that my DH was apart of and have kitchen manager in most location and not paid chef. Sad the dollar makes the deciding factor not the quality :guilty:
 
These days Disney is using Sysco for a lot of their products in the restaurants under signature level. We've been impressed by the quality of many of these ingredients - at times we've asked if a certain item is homemade, only to be told that it was brought in by Sysco.

Using food service companies is not necessarily a bad thing these days. They're specialized in what they do, and when they have larger companies like Disney, they sell them higher quality products. Food service doesn't always mean low quality.

Edit: also, if a dish works and is popular, there's a lot of incentive for Disney to use it in different restaurants (like the breakfast pizza). The fries, chicken strips, and mac and cheese are almost always the same at every restaurant, as well.
 

thanks that was what i was figuring...of course someone still can over or under boil a bag of food...I think that is the case with rest. most places( in the real world also) but i wondered when i saw some of the allearsnet menus were very similar ( can't remember where but remember in particular 2 very similar potato crusted fish dishes, one lots cheaper than the other!
actually i think the quality of food at wdw has improved a lot since the mid 90s. most of our food was good last trip even in the less expensive places.( actually some of our worse meals were more expensive...maybe some places need to use sysco if they don't :))
