It's part of Disney's corporate identity now--offer fewer choices but still be able to say "we offer _____." They have been tightening food budgets for years now--just look how your favorite restaurants have pared their menus in the last decade--and so it continues. It's the same in other areas: personnel, landscaping, refurbishments. The bottom line, while always a part of the Disney plan, has become the driving factor instead of the byproduct. I'm neither vegan nor vegetarian, but I appreciate variety and well-made meals. The Lighthouse was the ONE item at CHH that we would buy as it was a) light, b) tasty, and c) for Disney, reasonably priced. We have removed CHH from our rotation now.
