Is MK busy even late Monday nights?

I am trying to get at least 2 good MK days planned for our trip June 7-12. I have my FP+'s starting at 6 pm going through 10 pm, and I was thinking by then it should be not as busy. This is a new strategy I am trying to avoid heat and getting up early. MK is open until 1 am!

Any thoughts? I know Mondays are super busy but I am hoping at least most of the families with younger kids will have cleared out.

Also, when do we have to eat by? I keep reading that the restaurants close early and I don't want to be hungry!
