We have ordered sandwiches and chicken fingers from room service and packed them ourselves in zip lock bags. we had a small collapsible cooler and put ice in a bigger zip lock bag and took them on our shore excursion along with some bottled water.
Worked great. The only thing I could think of that would not be allowed would be some fruit issues in some ports...I know you cannot take any kind of food off the ship once back in the U.S., maybe some othe ports have a similar rule???
Also, as a side note....mayo does not go bad that quickly....it is a myth. I have worked for the company that makes Hellmann's for over 20 years and of course common sense should rule, but things made with mayo last much longer than one might think due to its ingredients. The mayo itself is not the real culprit, rather the things it is made with....this is from the Hellmann's website:

Many of the foods that are typically used with mayonnaise, such as chicken, ham, or potatoes, are much more susceptible to bacterial growth than mayonnaise itself. The ingredients in mayonnaise such as vinegar, lemon juice and salt create an unfavorable environment for bacteria that will slow or prevent its growth. We recommend the following to keep picnic food safe:
- Chill well before packing
- Carry to the picnic in an insulated container
- Keep out of direct sunlight
- Discard leftover picnic food immediately rather than carrying home to serve later
