Hello! I'm looking to go in November next year so can book through virgin for the whole thing. But is it better to book seperate flights and hotel? If so does anyone have any recommended sights to book through? Flights arnt out yet for November so do I book hotel and wait or book hotel when flights are available?

It's usually, but not always cheaper to do DIY.
November is off peak: a very quiet time of the year. Virgin aren't going to sell out on holidays during November, certainly not until 2-3 months in advance. Chances are that most November flights will NEVER be full.
The best advice is to wait until flights are released for Nov 2015, which will be 11 months before your return date.
Then you can work out whether it's cheaper to book flight + hotel separately, because you will be able to compare this to the Virgin Holidays prices.
Sites to book through: airline websites, Expedia, Hotels.com, Hotelclub.com - there are loads.
I would not book a hotel first. You can often save quite a bit of money by paying for the hotel in full at the point of booking. Since you won't know your dates until you sort your flight, I would wait until you have booked a flight.
Orlando is huge, and there are thousands of hotel rooms at every budget and in every location. November is a very, very quiet time of year - you will get a room somewhere that meets your needs (I have booked a hotel room 24 hours before travelling - in PEAK season - and I was still able to get a good hotel at a good price).
