Sauted? Sauteed? Anyhow, you know what I mean. Is it good? A friend is sending me over some eggplant today, and I've never really eaten it except as eggplant parm or in place of noodles in a lasagne. I have an entree already planned today, but I'm wondering if it will be good if I cube it and saute it in olive oil with a little Spike.

That really sounds good - we've done that before - but I like it dipped in egg and breaded then fried. That's really good too.

Just make sure your pan is hot enough. Eggplant soaks oil up like a sponge.

Thanks for the tips, you guys! I'll use my cast iron and make sure it's good and hot before I put the eggplant in.
