I believe breakfast is an all-you-care to eat, family style service meaning they'll bring the food to your table rather than you going to set buffet tables.
For lunch and dinner it's a hybrid. You order an entree, but you also have the "taste of norway" buffet to start with. You get up and go to the buffet for salads, etc. Then they bring your entree to the table.
