Can I get buy buying my kids the 16MB iPod Touches... or do they need bigger ones?
 
Probably - unless they have a TON of music. My music takes up 9 GB but I have at least 1500 songs.

IMO, this depends on how your kids are going to use them. Music and games? Or storing movies? If it's the former, 16GIG would be more than fine. That's a lot of music and games, though they may get to a point where they have to get picky. If they will store a lot of t.v. show episodes and movies, it won't last very long and they'll have to get choosey about what goes on a lot sooner.

We were going through my dd's iPhone this weekend because she was running out of room on her 32GB phone. One movie was FIVE Gigabytes (which is exceptionally large, but still....)

Do they like to video or take pictures? If so; go with the bigger one! My daughter has outgrown hers due to videos, pictures and music.
 

First of all, be aware there are some feature differences between the 16GB and 32GB/64GB versions of the 5th generation Touch. The one that pops to my mind is that the 16GB version does not include a rear-facing camera, only a front-facing one, while the 32GB/64GB versions have both. You might want to review the features to make sure there aren't any deal breakers for you.

Otherwise, 16GB is more than I personally will ever need on a phone or tablet, but DD13 can blow through 16GB in no time. She has hundreds of apps, probably close to a thousand pictures, lots of music, and as many movies as she can fit in the remaining space. If your kids are younger and just want a few games and such, smaller is fine. But if they are teens and will be more actively using them, then you might want to go biger.

Just realized this! They'll definitely want the rear-facing camera, so that means we'll need the 32GB version.
