Inspired by the Wedding Cake thread... alternatives to buttercream and fondant?

Can someone share their recipes for the buttercream that's not just shortening and sugar, as well as sharing the recipe for marshmallow fondant?
 
Marshmallow Fondant

1 16oz bag mini marshmallows
2 T. water
1 2# bag of powdered sugar


generously grease a microwave-safe bowl (pyrex)
put bag of marshmallows and water in bowl
nuke for 60 sec.
stir well
nuke at 15 sec. intervals mixing well between until marshmallow is melted.

*at this point, I add flavoring or color, I find it's much easier to color the marshmallow than fondant! :thumbsup2 I use Americolor gels.

dump 1/2 the bag of powdered sugar into the marshmallow mixture and mix until incorporated with a well-greased spoon...it will be very sticky

mix in as much of the rest of the powdered sugar as you can with the spoon, switching to your hands when the spoon doesn't work anymore.

turn mixture out onto a powdered sugar covered work surface (I just use waxed paper on the counter or kitchen table). Knead in the rest of the powdered sugar with your hands.

*note that for this step, lately I've just been kneading in the pyrex due to lack of space on my kitchen counter and table...

voila! marshmallow fondant! It's stretchy! Tastes really good on sugar cookies...
