They do change these ever so often. Epcot is a very cool place. If possible split it into 2 days of touring. One early morning aka Rope drop for rides and educational, techy stuff. Leave mid afternoon resort break. different park in evening that has a low crowd day.

second day world showcase strolling in afternoon , dinner/ late lunch, stay for fireworks.

There are a variety of games to learn about things to play together- they change out the exhibits sometimes but our favorites are The Piggy Bank Game, Where's the Fire, and the Build a Coaster (I can't remember what it is called). The also have some movie type exhibits and sometimes have things that you can make and take home at some exhibits- it just depends on what is open when you are there.
