I also have Tanis as a coordinator- Isn't she great? You have to give her all of that information so she can type it up in the letter of agreement. She will then give you the letter and agreement through e-mail and you will need to print it off, look it over, sign, and give her your deposit ($500 dollars I do believe). The letter of agreement basically states that you are agreeing to have a disney wedding, what you get with that, what is aloud, some options, and you stating who will be paying for the wedding (in your case, you just put that you are) and you give her authorization to put funds on a credit card or you give her a check. Its very short and simple. My letter of agreement didnt take 2 weeks to get, but my planning kit did. I got the letter of agreement as soon as I sent back that information (full names, etc).
Once all of that is done, you will get your planning kit in a couple of weeks which will allow you to get down to business with everything. There you will pick out your cake flavors, any added photography or videography, floral, whether you want characters, music, transportation, etc...
