Incorporating Desert Party into Menu?

I am going to post here, and in my pj in hopes that someone will have some answers for me.

I have been thinking a lot lately about having a desert party. Our wedding ceremony is at 10am so we are having a brunch, but I would really like to do something with our wedding guests in the evening. So a desert party seems like the perfect idea.

I would like to have it at Sago Cay, so as far as I know the only charge is $75 for set up, and a minimum of $500. Please correct me if I am wrong.

So now onto my questions. We are having the Tinkerbell's Brunch buffet - but substituting the salmon for mickey waffles. So we will be having the yogurt parfait martini's, chicken, pasta, bacon and sausage, omelette station, waffles, breads/pastries - and I cannot remember what else. This seems like a lot of food. I was wondering if we would be able to scale down the brunch menu and use the amount of $ that we save per person to add to the desert party. Does this make sense? I heard that the desert party also counts towards your per person minimum for the wedding (i.e., $75 minimum for brunch) but is this true? If I took out a couple of things, most likely chicken and pasta, would this still leave enough food and would it look cheap?

We really don't have much of a budget for a desert party, but it is really something that I would like to do if we can somehow squeeze it in. I will talk to my planner at some point, but I have been having a hard time getting a hold of her, so thought I would ask you ladies for some help.

I'm pretty sure that the dessert party would count towards your per person minimum...I am sure someone else would come by and confirm that.

I would personally omit the chicken and pasta, and I don't think that looks cheap. We had a brunch as well, and decided not to have any of the lunch type foods, and we were so glad we did that! Everyone was so full from the bacon/omelets/waffles, etc, that I think it would have been wasted. Plus, I have always felt that chicken and pasta doesn't go well with breakfast food, but maybe that is just me :rotfl:

Thank you for your input! It might be a Canadian thing lol I don't much care for chicken and pasta with breakfast foods either :rotfl:
 
I thought that too, until I tried the chicken and pasta!!! It's sooooo good! I wouldn't be able to eliminate them now if I tried.

Yes—any food and beverage purchased for your wedding day counts toward the per-person food and beverage minimum. As long as you still meet Narcoossee's $1,500 food and beverage minimum, you can take as much off the brunch menu as you want.
