What do you call sloppy joes? I have heard just in Iowa them called maidrights, taverns and BBQ's.

Do you have anything called a hotdish? Huge in the midwest. Or casserole?

K - off to keep moving furniture - upstairs stuff down - cleaning carpets - not fun at all...

I did throw some randow things from the fridge together for an awesome lunch dish -

Cheese totellini from Trader Joes (says it serves 3)
Hot Turkey Sausage links (4 sausages)
1 each mini red, yellow and orange bell pepper
1 small onion
5 - small tomatoes
4 table onions w/ chive
3 Tablespoons of minced garlic
1 tbsp of Italian seasoning

Boil pasta - 8 minutes
fry turkey sausage in 1 Tbsp. olive oil and with the reg onion and garlic

When Pasta done - drain - set aside
after saugage cooked - slice in small pieces - add back to the pan - add veggies (cut up) for 3 minutes with pasta - toss till all is coated

- sprinkle w/ parm cheese if desired while serving

This turned into a huge meal that served 5 of us - no thick white sause like I usually do - it was great! Peppers tasted beautiful!

Erika - I've taken a couple of trips to Acadia NP. Gorgeous country. I read once that car commercials are often filmed on the Maine coast. I can see why. I know what you mean about the economy. My brother commented that his commute is getting easier. I'd rather have crowded highways.
 
For dinner tonight...Cauliflower Cheese Soup with a side salad:

INGREDIENTS (Nutrition)
3/4 cup water or vegetable broth
2 cup cauliflower, chopped
1-2 stalks finely chopped celery
2 large diced carrots
1/4 cup chopped onion
1/4 cup all-purpose flour
3 cups milk (I use fat free half and half)
salt and pepper to taste
4 ounces shredded Cheddar cheese


DIRECTIONS

Steam carrots, onion and cauliflower until soft. Transfer into blender with water/vegetable broth. Blend until mostly creamy.
In a large saucepan, put oil, butter or water in separate saucepan over medium heat. Stir in flour, and make a paste, and gradually stir in milk. Cook until thickened. Stir in pureed vegetables with cooking liquid, and season with salt and pepper. Stir in cheese until melted, and remove from heat. Add more broth/water until you get desired consistency.

Just catching up. Thanks so much for the picture compliments! I should post a before and in progress pic. I have some from about a year ago that would work. I very much enjoyed my beer ALL saturday afternoon, but sadly I totally crashed at like 9 pm. How lame is that?

We finally made it back to the strawberry farm/veggie place yesterday and I loaded up on veggies.

I went back on the no alcohol wagon yesterday, and ate ok. Not stellar, but okay. I am tracking today and have done C25K already. My new shoes should be here tomorrow, which is a good thing because I had some pain while I was on the TM.

Ronda, I had never used biofreeze before, but I had several samples and have heard people rave about it over on the Events board. They have it on course during the half and full marathon at disney.

I am somewhat recovered. Tired, and a bit sore, but really not too bad. The training of the last 2 weeks really helped, I think. Now if I can just get through practice tonight, I am going to take the next two days off.

Oh, and I tentatively signed up for another tournament, the last weekend in June in Charlotte.

Nancy--I know this won't likely make a difference, but I'll give it a shot anyway! You definitely DO NOT taste the cauliflower in this soup. Not at all. It is blended and the cheese and other flavors really take over. It really just helps thicken it. And since cauliflower is a "super food", we try to eat it often. If it helps any, my kids even eat this soup. Thank God blueberries are also a super food! :rotfl2: I never need to disguise those.

Kat--awesome progress! Just awesome! I so don't want to burst your bubble because you are 100% ON and I am super proud of you! I just want to caution you (and everyone reading) about low carb. It is so tempting to stay on it because you get such great results and so quickly. But after the first two weeks, you are losing lean muscle mass. I know your plan is to be smart and only do this for a couple of weeks, but I also know it is so easy to stay on it since you get such great results. So please promise me that you will begin to add your healthy carbs back in when it is time, ok? :goodvibes I just can't tell you how in AWE I am of you when you are on like this! You just do EVERYTHING right! :worship:

I am back on after V-day as well. It was a fun...had a little of everything. Beer, wine, champagne. Now I am on the wagon again until the end of this challenge, which also happens to be my anniversary. So I can have wine on that night as well. And if I am being honest, I also will likely "clelebrate" the night of my tri. So, including Valentine's Day, I have only had alcohol on two occasions since getting on the Wagon in early January. And will have it two more times in March. I can live with that.

Liz--healing vibes, babe. Hope you are on the mend soon. And just think, at least you get to eat saltines! You LOVE saltines. (Yes, I remember everything! :rotfl2: )

Ronda--Acadia is jaw-droppingly gorgeous. I am so glad you have been able to experience it. There is a marathon and half marathon up there that I am looking at. I mean, talk about an incredible run! The only problem is that I think you have to run up Cadillac (the mountain that gives you that amazing view). I will have to look into that. Have I mentioned that I am a hill wimp? OMG, that is what is so appealing about Disney races! (Well, that and they are in Disney! :rotfl2: _

As for my running frequency and plan: I run a minimum of 4 days a week, sometimes 5. And yes, I need a plan and stick to it. I started on C25K and finished it really early (in 5 weeks or so). And then I didn't know what to do. Should I try and improve my speed? or Should I try to increase my distance? I was at a total loss.

So I went to my local running store website and noticed that they had personal coaching for a really modest fee. ($75 for 3-6 months, depending on your goals.) I met with the coach and signed up that day. He and I worked on plans and goals together and then he designed a couple of training plans for me to get me to my goal of running a Half. It was so helpful and took all of the guess-work out of my training in those early days. And I had someone I could call, e-mail, or meet with whenever I had questions, concerns, an injury...whatever. I shared my training plans with Amy when she started and would be happy to send them to you as well. AMY--did you ever use them or find them helpful??

The other thing I did was to buy a bunch of books. I am a researcher by nature (and profession), so it is my M.O. to read up on anything and everything no matter what. I really, really, recommend the books by John Bingham. And most of them have training plans included in them. I also recommend Galloway. Both of these are--hands down--"the" big names for beginning runners. You won't go wrong getting books by either of them.

My day--I had PT for almost 2 hours today! Ok, this is just hilarious! I am not sure why, but these guys are treating me like I am one of the elites. Looking around, it seems like most of their practice is people who maybe had some sort of accident or surgery and are re-habbing that. Not athletes. And once they found out that I was traninig for a tri...OMG. They just pull out all of the stops. And they all come over and take turns "talking shop" with me. I don't have the heart to tell them what my oh-so-slow pace is! :rotfl2:

Anyway, the work-outs are fine. VERY low weight and very HIGH reps. Plus time on the bike. And then they do 15 minutes of deep tissue massage (YUM) and 15 minutes on the zapper-thing (where they hook me up to a machine and it does hundred of little electric shocks to the muscle).

Today they told me that I would be sore and tired after the session. I didn't believe them because none of it felt like work to me. Like I said, really low weight, etc. Anyway, I finished and went to my mom's where the kids were. I sat down to visit with her for a bit and promptly fell asleep for about 40 minutes! I guess it DID wear me out! :rotfl2: (And I NEVER nap. I am no opposed to it, I just don't do it.)

Then tonight I went to the gym (with permission, Nancy! No smacking my head, please! :lmao: Not even for practice!) and did some light biking. So my totals for today are:

Food = at 850 cals right now, but will get up to 1000-1100
Exercise = 2.5 hours (16 miles on the bike plus strength at PT...I am counting the muscle work at PT as part of my time but not the massage and shock. I wasn't sure about counting this at first, but the reality is that I am doing this to improve the physical health and condition of my body, so it should count...that is why my minutes are still high for the challenge).
Core = none at all this week. Believe it or not, doing core hurts more than anything elese!
Alcohol = none
 
Roddy - the recipes sound great. I wish i liked hummus and guac.... i think they sound fantastic, then everytime i take a bite, i think it's horrendous.... i dont get it!

Here's the thing! It's gotta be homemade for me. I've tried pre-made or store bought (whatever you call it) hummus and guacamole and I hate them, they make me physically ill. Home-made makes all the difference.

Roasted red peppers, eh? Haven't tried that, will need to! :thumbsup2

Erika - Tahini, I really need to check the grocery store good. I looked for it the other day but I didn't look that hard because I wasn't shopping for hummus making material. So, I'll have to let you know. :lmao:

My salsa is versatile. Not only do you throw it in with some avocados to make guacamole. You can cut up some fresh fish or shrimp in it and let it sit in the fridge over night and you've got 'Ceviche'! :woohoo:

And yes, ugh, tomatoes :scared1: . I hate tomatoes, but, like I said, I do put a few in my salsa for 'authenticity' purposes. And, sigh, I try to fool myself into eating them because they're so nutritious. I think Kat could eat my salsa because I cover up the taste enough with lots of onions, jalapenos and cilantro that you can't really taste them.

Erika--The training plans definitely helped. You sent them to me when I was just figuring out my training plan for the 1/2 and I was able to use them, as well as some stuff from MfM. I am already freaking out about what I am going to do after my 1/2 on 3/1, so I will probably revisit them again. I had planned to take a break from doing really long runs for awhile, but then I am thinking I might like to always be ready to do a 1/2. :confused3

When is the race in Acadia? DH has been dying to go there.

Ronda-I most definitely need a plan. I do freak out without one.:scared1: Right now I am running 4 days a week.

Nancy--yes! My weakness is Wasabi Almonds. OMG, yum! I had to stop buying them b/c I would just pick at them all day. Just a couple at a time. But once I started paying attention, it was like 30 in a day! (That is like 300 calories...a little less, but I always round up.)

Liz - saltines are about the only benefit to having the flu. Those things are wicked yummy and eating an entire sleeve of them is way to easy. Feel better soon...

Hi gang - had an awesome time at the gym. My cardio workout on the bike was just what I needed and got my mind back in the game (I was starting to fade because of the weekend's activities).

I do have one question though. Is it wrong when the gym employees start to know you by name or is that one of the final steps to being fully initiated into the dark side. Personally, I am waiting for Darth Vader to show up and present me to the evil emperor anytime now. :darth: Either that, or I am going to have to start calling Jesse Yoda... :yoda: :rotfl2:

Now that I have proven that I am more than a little punchy tonight, I should stop.

Thanks for the hugs. Sorry for the drama tonight, gang. Got alot on my mind. Finished my taxes, so now I have a decision to make. I was bumped into the next tax bracket, so my refund is quite a bit smaller (But, my income for next year will drop dramatically since we have cut out our bonuses). I have enough to pay for our trip, but not much else. So here is my dilemma: Do I cancel my POR ressies and stay off-site or do we go with it and only visit WDW parks? I really have to think about this. Another option would be spend a few days on-site and the rest at a less expensive location. Hum, debate, debate. We are going, but I don't want to cut it too tight.
