Steph- the ricotta is SO easy! It's just goat milk, vinegar, butter & baking soda....simple! Then into stuffed shells, lasagna, etc. :woohoo:
Going to make it right away ... OH WAIT YOU NEEDS A GOAT!! DOn't have those here anymore .. we used to about 15 years ago, had a goat milking parlor even!
'K. Tonight I'm working on the labels for my soap....yup. Goat's milk soap...not quite as easy (or tasty! :laughing: ) as the cheese - but oh so wonderful for your skin!!

And did i hear goat cheese ricotta? For some reason i have an irrational fear of any cheese not derived from cow milk. It's completely ridiculous, i'm aware, however i spook easily......

I don't enjoy ricotta much. The texture is really nasty. Like cottege cheese, which totally grosses me out. I like my food unspoiled.:laughing: Now, I do eat ricotta, when it's mixed with like 8 other cheeses, so the ricotta to "other" cheese ratio is small.

Nancy, I'm not slamming your homemade goat cheese ricotta, I'm just sayin' don't send any samples my way, K?

This may be a record for me! It is already past noon.

Well, I was supposed to do my long run today (12-ish miles) but that takes a long time (over 2 hours just in running, plus stretching cool down, etc.) so I need like almost 3 hours and my parents weren't available to watch the kids, so no long run for me today. And now I am going away for several days, so...:confused3 it looks like it might be TUESDAY before I get one in. (That would be the first day of school.)

I did, however, make it to the gym for a quick work-out. 45 minutes on the elliptical (level 9) and 15 minutes of core. Better than nothing.

Argh!!!! Work is totally kicking my butt today.... It seems like most of the people I work with lately are nothing but a bunch of whiners...

Back yesterday from another visit to Tucson. Having a bit of a pity party right now. I gained 3 lbs in 3 days while I was out there. :mad: On top of the 2 lbs that keep cycling on and off. :mad: :mad: Now, part of that's real - I end up eating wrong at all the wrong times. And part of it's not - I do a camel impersonation when I'm in Tucson. (Drink tons of water and keep it!)

This morning I slept in after a horrendus allergy day yesterday; it was still dark at 6:30. Too dark to ride my bike. Maybe I need to suck it up and try to become a runner? I can run in the dark more safely than ride my bike.

We leave for WDW in 6 days, 23 hours, 15 minutes. I decided this morning that I'm going to watch what I eat this week then see what I can do about exercise. Since Kaitlyn's back to school her bedtime is now before dark, so I need to go out and ride in the evenings and just deal with humidity, bugs, dogs, and people in my way. (Ducks are not out in the evenings!) I'm just completely off track right now - and upset because the skirt I knew I was going to fit into for this trip isn't wearable.

Still looking for that rope to get back on the wagon -

Looks like we're dodging Gustav (the Hurricane, not the new TOM acronym!) but Hanna (the tropical storm) may come and dampen us in The World.

I have had a good day for the most part. Food--right on track at 1200 cals. Got my work-out in even though I didn't get to do my long run. And Karen only called twice. A good friend of hers is also going through a break-up and moved out of her house (no kids) and is staying with Karen until she figures out her next move. AWESOME. Now Karen has someone there full time with whom she can commiserate.

So, we are all packed, the car is loaded and we leave at 7am. UGH! The kids and I are never up at 6, so it is going to be a major challenge. And since I am pretty unmotivated to go, well, let's just say it could get ugly in the morning. At least it looks like great weather.

I will be completely offline on Friday and Saturday, but I will be able to check in on Sunday night.

Ok, off to do some trip planning so that I can make ADRs from the car tomorrow. :goodvibes

It is pretty funny. I'm laughing right now trying to decide if I should share with you how I used to attempt to manually multi quote. I'm sure one can imagine such an intelligent feat.

Today was a short Turbo Jam. I"m getting back to a six day plan because of you guys. Six on, two off. I was shaking my head today thinking thank goodness I kept the exercise going for the most part since the BL. I hate to think of the damage without it.

Forget that. I need to focus on today. :love:

Everyone is probably sleeping. I just finished teaching summer school last week so my clock has been totally off this week. It's like a big, long slumber party.

And a few of you mentioned not wanting lurkers to be afraid to join such a tight group. It went both ways for me. Afraid to jump in because you are so close. But knowing what a lovely place to jump since you are all so hysterical and caring with each other.
