Do they have any in-room sitting services on the ship (similar to the babysitting services offered at Walt Disney World) My husband and I would love to sneak off and have a few drinks at one of the bars after the kids go to sleep, but they are too young to be left alone (7,6 and 4)

No, but all 3 are old enough to drop off at the club after dinner for a bit so that mom and dad can go have those drinks. We did this on our first cruise when our kiddos were 3 and 5, the first night when we came to get them, they were awake and playing and told us to go away, after that, we'd just finish up whatever we wanted to do if it was an adults-only thing, and pick them up afterwards, the club has little cots that they put out for kiddos who are falling asleep, and their later night activities tend to be of the quieter nature so you don't get them back all keyed up and bouncing off the walls.

Kids clubs are def an option during the day, but they go to sleep pretty early (8:30-9pm is a late night for them) so we will be stuck in our cabin after bedtime...

That's great to know that they have cots as an option if they are getting tired. I am pretty sure they will love the kids clubs, and wont give them a bedtime during vacation, but I just didn't want them to fall asleep at a table

I'm hoping my three are going to fall asleep at the kids' clubs and we'll transfer them to the room when we are done enjoying an after dinner drink! ;)

On our first cruise our youngest who was 7 closed down the clubs every night at midnight. He loved it.

If you have a verandah you and your husband can sit out there with a glass of wine and a cheese plate from room service.

Definitely a more expensive option, but my widowed mom came with us on our first DCL cruise. That along with meeting a great family here on the DIS cruising the same cruise (and 3 doors down from us!) and we all had a fantastic cruise. My mom was 75 and loved having the kids with her after dinner while DW and I went to Palo or whatever!
Our new friends' kids took over ours at other times.
We had connecting outside staterooms so we had a private room that turned out to be pretty inexpensive at the time.
Our kids were 8, 6 and 2.5 yrs old. Now they're 12, 10 and almost 7 and ready to do it alone.
