@Meriweather, that avocado and onion dip sounds good! I looked up a recipe, and just might try it for "football snack" today. (I have one avocado left, and no idea until I cut it if it's still useable. 😆 )

Christmas was good here. DS was home, and we were able to go to dinner at my in-law's house. Everyone liked their presents, and I got asked for the recipe for both of the new cookies that I made.

Today is sunny and feels warmer than it is. I already have laundry in, so one guaranteed accomplishment. Everything else is gravy.

Avocado dip I make has not recipe and it takes 3 avocados, but I'm sure you can come up with something good!!
Onion dip super easy. I do the sour cream and onion soup packet one.
 
We both tested negative for Covid this morning as did our guests who are coming today. Tom’s cousin provided the tests, they are particularly careful, and I am glad we will be able to visit!

I have another apple pie in the oven…yesterday’s went home with my DSis. I really only like pies on the day they are made!

When you have a free moment, will you please post your recipe. I don’t have an apple pie recipe and I could look online, but I prefer to get recipes from people. Katie is loving apple pies and she loves to bake, so it’d be fun to make this with her :goodvibes
 
I’m relaxing a little bit after some busy days. I was hoping to relax all day today, but I had to lector at Mass and then afterwards we cleaned up all the leaves in our backyard - there was a lot. Then I tidied up the house after the last couple days of hosting Christmas Eve & Christmas Day. Busy day - feels nice to sit and watch some TV. Tomorrow is back to work.
 
Until recently I always used Stayman Winesap apples for pies, but we no longer live near an orchard, so I use Granny Smith. We’ve been happy!

Apple Pie
5 to 7 tart apples
3/4 to one cup sugar
2 T enriched flour
1/2 to 1 teaspoon cinnamon
dash nutmeg
dash salt
Pastry for 2 crust 9” pie
2T butter or margarine..I use butter

Pare apples and slice thin.
Combine sugar, flour, spices and salt..then mix with apples.
Line 9” pie plate with pastry, fill with apple mixture.
Dot with butter.
Adjust top crust, and sprinkle with sugar for sparkle.
Bake in 400° oven for 50 minutes or until done.

I do put on a pie sheet to catch the drippings.
 

I’m heading back to work today - that was a fast 4 days off.
I’m curious to see how many cancellations we’ll have due to COVID. We’ve already had a lot, that I’m sure it will continue. COVID is hitting closer to home more this time than it has in the past. Every day I find out that someone I know has COVID - it’s crazy! Thursday, my unvaccinated DD23 is bringing my 9 month old grandson to the house to get his Christmas gifts (I haven‘t seen either of them since before Thanksgiving due to her controlling spouse) and I’m kinda nervous about her coming, because I know she is not careful (if her spouse didn’t need to get vaccinated for his job, he wouldn’t be either. I’m sure he’s part of the reason DD isn’t vaccinated) I guess we’ll wear masks when she’s here and keep our distance. I can’t reschedule, because who knows when I’ll see them again. I also just found out DD is expecting again and when this baby is born the babies will be 16 months apart from each other. Just another way for her spouse to keep her locked to him.

Anyway….enough gloomy talk from me.

I will be cooking for DS's family today (a weekly thing), cleaning downstairs and starting to pack away Christmas decorations. Hope to get it all away today, except the tree.......but we'll see. There is a lot and with cooking and cleaning my day will disappear

Such a tough situation. Hope things work out well for your DD............and your family.
I would definitely wear a mask since they are vaccinated.

She cancelled this morning due to them being exposed to COVID over Christmas. So who knows when I’ll see them - maybe sometime in January.

I’m very excited - my new dryer comes tomorrow. I just called the appliance store and nothing has been delayed. I’ve been without a dryer for 3 weeks - I have a lot of laundry waiting to get laundered :laundy:

She canceled due to being exposed to COVID. She said maybe next Thursday, but she’s having friends over for NYE, so I may not allow a visit due to her being unvaccinated. If she and the baby are well in a couple weeks maybe she can come then. I wish she would get vaccinated.
 
I’m gonna be home all day today waiting for the dryer :cheer2:, waiting for a tech from our security company (alarm needs to be fixed) and the doing my mountain of laundry:laundy:. The dryer is scheduled to come between 9:00am & 1:00pm - really hoping they come earlier rather than later.

Slo, did the drier come?

Yes, but it’s not working right - it doesn’t heat up as much as it should and loads are taking 2 hours to dry - so frustrating! I called the appliance store and they scheduled GE to come to the house on the 6th to look at it. I scheduled them to come between 1:00 & 5:00 in hopes they come later so my DH will be home from work and then he can talk with them. So, the dryer situation is a to be continued…..:headache:
 
I’m working until noon today and then all the parents and our friend is coming over around 6:30/7:00 tonight. I’m looking forward to playing Disney Scene It with Kate tonight - very competitive and lots of laughs. :mickeyjum:goofy::dumbo::donald::stitch::sulley::figment:
 
We are in car driving to MCO. Our friends were supposed to arrive around noon. Now scheduled for 5:30. We sure hope it happens. They are probably quite hungry. They have been on the go since 5ish this morning!
