I'm baking some banana bread

Did someone mention pumpkin? That's what I've got cooking today: pumpkin bread. I do it in batches in November, freeze them and give them as gifts to my neighbors for Christmas. Yummy. I love the way it makes my house smell. Oh, by the way, I always leave out the nuts and it turns out great!
 
mmm....warm banana bread with butter...mmmmm!
 
My flatmate made banana bread today, and the flat smelled so yummy! The bread is amazing, too...I can't stop eating it!

Done and eaten. It was a little too moist. More like a pudding than a bread, but it was so yummy.
 
My first attempt at banana bread was tragic. I was newly married and confused my teaspoons with tablespoons and added way too much baking soda. Smelled good, but you should have seen my husband's face. Priceless! Bless his heart, he didn't want to hurt my feelings.
 
If I could only eat one slice of banana bread. No, I have to eat at least half the loaf. That's why I dread seeing bananas start to turn black in my house. That's when the banana bread comes out GREAT!
 
I use the recipe out of the Betty Crocker cookbook and it turns out great every time. I only use about 1/2 the cinnamon it calls for or else it will overpower the banana taste.

I mush the bananas up a lot until they start to get real creamy.

I make small loaves (for some reason they bake better and turn out more moist)

I made 12 mini loaves last week and they were gone in 2 days.

Yum!

When I was younger and Mom bought bananas...I wouldn't let anyone eat them so they would get over ripe and I could make banana bread! Must have real butter...yummy!
 
1 cup sugar
1 stick margarine
2 eggs
1 tsp. baking soda
2 cups flour
1 tsp. vanilla
Dash of salt
3 ripe bananas
Butter or margarine (for greasing bread pan)

Step 1
Preheat oven to 350°F. Lightly grease and flour a loaf or muffin pan.

Step 2
Beat the sugar and margarine with an electric mixer. When creamy, add the eggs, baking soda, flour, vanilla, and salt. Have your preschooler mash the bananas with a fork. You should mix in the bananas.

Step 3
Bake for about 18 to 22 minutes. (Baking time will vary depending on your oven.)
