Sam - if you get the chance, head on to Exmoor; we have friends who have a sheep farm on the edge of Exmoor and some of the places there are fantastic. Lovely little streams and rivers, Withypool and Landacre (pronounced by the locals as Lanacerrr) are picture perfick . . . as much of that area is.
For the children amongst you

a trip to Watermouth Castle, just outside Ilfracombe, is well worth it - a few rides, gnome village, lots of interaction for the children and lovely gardens - it's a good 3/4's of a days entertainment.
Another one of interest is Lynton and Lynmouth - you get a water-powered little train thingy from top to bottom (recommend if you want to walk you walk DOWN and get the train thingy UP

). Beautiful views and a great beach at the bottom for crabbing, etc. Lovely little restaurants all around both of these - and I can never remember which one is Lynmouth and which is Lynton, but we went to North Devon for the first week of our honeymoon and LOVE IT
