Epcot - I rarely do restaurants here because I'm usually there during a festival and just eat from the booths.
Animal Kingdom - Tusker House
Hollywood Studios - Sci Fi if doing TS, but I really like Ronto Roasters.

I'll be honest and say that dining isn't that important to me - not planning my trip around it. Maybe a better way to phrase the question is, a terrible tragedy has happened and only one restaurant is available - all else are gone forever. What would you save? That out of the way;
MK - CRT - it's too pricey but man do I love eating in the castle - just such a unique experience.
Epcot - Garden Grill is the only one we've felt compelled to go back to
Animal Kingdom - Tusker House character breakfast is our favorite Disney Character meal.
DHS - Woody's Backyard BBQ
DS - Raglan Road - we had a great time here in 2020 when everything was shut down.

MK - Don't really have one. Agree with the above about heading over to Steakhouse 71.
HS - Sci-Fi. It's our family's favorite. We go every time we go to WDW.
Epcot - Prefer to snack around the world. Space 220 was fun but not necessarily one to hit every visit.
AK - Satul'i Canteen. The best QS there is, IMO. Quick, easy and relatively healthy depending on your order.
DS - Homecomin'.

The only "must have" dining at WDW is Jaleo at Disney Springs. It's the only restaurant I would go to if it was outside the bubble too.

My answer to this question would change based on how often you go to WDW/if this is your first trip, if you're traveling with kids, etc; but in general, this is my shortlist:

MK: Liberty Tree Tavern (though would prefer to head over to Contemporary for Steakhouse 71)
Epcot: Chefs de France
Hollywood Studios: Ronto Roasters
Animal Kingdom: Yak & Yeti
Disney Springs: Chef Art Smith's Homecomin'

Adult DD & I went to Shiki-Sai 2 days ago when we were there. We're back home and keep talking about our lovely meal there. We never particular cared for "Tokyo something or other" when it was there but really liked Shiki. The people are even so sweet.
