My bf and I will be in the dining plan this October and I'm wondering if we eat at a signature restaurant (or any restaurant for that matter) and want to use the two required credits for signature dining for one of us, but pay out of pocket for the other if that's accepted or if you have available credits do they make everyone in the party use them?

You sure can. It's up to you how and where you use your credits. Just let the server know before you order.
