Possibly if you pay to valet park. To park for a dining reservation you’re not allowed to park all day. There is a 2 or 3 hour limit. The lots at Epcot resorts are very often full & have “resort guests only” signs up.
I agree with @focusondisney - the general limit that is posted on most sites is 3 hours for an ADR. Part of the issue is guests trying to do exactly what your are considering. This used to be an attempt to by pass parking fees or just get closer. This is a big issue around MK but over the past couple of years it's become a bigger issues around Epcot too. Your best bet is to enjoy your meal then head over to Epcot and park for the day.
If valet parking is acceptable for the full day, maybe that would be the way to go. My preference is to enter at International Gateway as opposed to the front entrance, so I'd be good at Boardwalk as well.
Boardwalk is even stricter than Y & B. The only people who should be parking at a resort for the whole day are people who are paying to stay there. If you want to enter thru IG, you can park at Studios & walk, boat or skyliner to Epcot.
You can leave your car for the day if you pay for valet parking. Disney doesn't mind that since the valet lot is rarely full, plus valet parking costs more than parking at the theme parks.
