If crowd level is 1, would you still stick with easywdw recommendations?

We will only have 3 park days, September 10-12. Crowd level should be low but I'm not sure if we should still follow recommended parks?

I would. Low crowd times are fantastic no matter which park you're in but I'd still rather be in the one that's most recommended to make the most of our time there.
 
Yes - the recommended park will still be considerably less busy, even on a very low crowd day. The only exception - if you are going for only a few days. In that case, go to the parks that you want to go to and accept the difference.
 
Yes, but if you can add a hopper, I would do so and take advantage of any evening extra magic hours at MK, which would never be a recommended par on an extra magic hour day.
 

Yes, I would stick with it. We were there last year from Sept 14th-22nd. There were several 1's and 2's that week, and we stuck to the calendar. We were just stunned by how few people were in the parks! I am a Florida native and have been to WDW many times, but I had never, ever seen crowds that small. We rode a ton of rides and there was just a more relaxed vibe around the park. We went to Epcot on our arrival afternoon, and despite it being a low number (3 or 4), it was still pretty busy because it wasn't recommended. You won't hate the crowds on a non-recommended day at that time, but you will want to take advantage of the recommended parks.

I have heard that the difference between good and bad parks is more pronounced when it is slow than super-busy. For example, when it is super-busy, the difference in a good or bad park/day might mean the line for Space Mountain is 75 minutes instead of 85. But in a slow time period, the difference those days might be 20 minutes or 40 to ride Space Mountain at similar times. Still better overall, but a much bigger gap. The most popular rides will still get long lines every day, just build slower or top out at a lower maximum.
