ideas for 40th birthday

I am not sure if this is the right forum but since most of the ideas I need are likely related to dining experiences I thought I would post here.

We are staying at the Boardwalk Villas for 1 week for my husband's 40th birthday in December. I am looking for any and all ideas on what I can do to make this a great week with some new experiences. We have been many times and have enjoyed events such as the CG fireworks, Breathless Illuminations cruise, La Nouba, etc. In terms of food we are somewhat boring and do not eat any seafood, just poultry, beef, pork…

Any ideas (dining, private dining, recreation) would be great!

For my 40th, the plan is to sleep late, because the night before will be a night planned to party away my 30's and enter my 40's comfortably numb.....or something like that. ;) For lunch, we are going to celebrate with a Kitchen Sink at Beaches & Cream. My dinner of choice is Rose & Crown at Epcot. I am hoping for a little pixie dust and the chance to see IllumiNations while we have dessert. Maggie
 
Is he into sports?

For my 40th, yes mine, :) at my request, DH and I spent the evening at the ESPN club watching the Steelers clobber the Green Bay Packers. As a huge football fan I couldn't think of a better way I wanted to spend my birthday.

After the game was over, DH and I walked over to MGM for EMH and rode ToT (my favorite ride) about 20 times in a row.
