I'd like to make Chili tonight for dinner. Have the ground beef already defrosted...have red & white beans ready too...

Does anyone have a good Chili recipe they'd care to share with me? We woke up to snow this morning so a nice hot bowl of chili seems appropriate for dinner tonight.

Also, what would you serve with it?

I should never have clicked on your post! Now I'm going to be craving chili all day...;)

I don't have a recipe. I just dump in everything I like: onions and green peppers browned w/the beef, chopped tomatoes, red kidney beans, chili seasoning, lots of garlic, more chili powder, red and black pepper, and a dash of cocoa powder.

I eat it with lots of cheese and corn bread or pretzels. Yummm! :)
 
Here you go Mishetta:

Saute 2 lbs of ground beef, with 1 cup chopped onion, 1 cup green pepper, 1 cup chopped celery. Drain fat.

Add 29 oz can of tomato sauce.
2 15 oz can of kidney beans - drained
2 15 oz can of pinto beans - drained
1 can diced tomatoes with juice
2 teaspoons cumin
3 tbls chili powder
1 1/2 tsp black pepper
2 teaspoons salt
2 cups of water
2 tsp vinegar

Simmer for 2-3 hours.

(The next time that I make this, I make not put in one of the cans of beans. My family likes LESS beans.)

I don't serve Chili with anything in particular. Saltines perhaps.
I know that some people serve it over pasta, rice, or baked potatoes.

Yum...chili is like a staple in our house. One of the few things that DS8 will eat.

I like to add at least 1 can of chopped tomatoes. I use a can of tomato soup as a base. I add lots of garlic and sauted onions (they hide well in there). Then just the regular chili spices -- chili powder, cuman, a dash of cinnamon.

Sometimes, I'll boil some pasta and throw that in. It seems to make it stick to your stomach a little better in our house. We top it off with shredded cheese.

And, a must for us, warm rolls or fresh Italian bread. I think I'll plan on some this week too. Sounds good (although it's suppose to warm up around here this week:) ).
 

I make some really good chili and my secret recipe is a little bit of sausage browned with the meat. It makes it *very* yummy. I basically just add...

Ground Beef (1 lb)
1/3 of a Roll Sausage
Onion
Chili Beans
Kidney Beans
Tomato
Chili Powder
Cumin
Garlic
Tomato Juice

I fry the ground beef, sausage, onion, and garlic up then add the beans, tomato, juice, & spices. I cook it down then I add a little more spice at the end. I don't really have a set recipe. I just cook by the seat of my pants and eyeball the ingredients.
 
Brown 1 lb ground beef with one medium onion, chopped; drain fat
Add chili powder and cumin to taste
1 can pinto beans, drained
2 cans of diced tomatoes
1/2 salsa (I use Chi Chi's mild)

Top with sour cream and shredded cheddar cheese

Here's a favorite recipe for chili that clones the stuff served at the Wendy's chain. Dave Thomas, Wendy's founder, has been serving this chili since 1969, he year the first Wendy's opened its doors. Over the years the recipe has changed a bit, but this version here is an amazing copy of the version of chili served in the early 90's. Try topping it with some chopped onion and cheddar cheese, as you can request in the restaurant.

2 pounds ground beef
One 29-ounce can tomato sauce
One 29-ounce can kidney beans (with liquid)
One 29-ounce can pinto beans (with liquid)
1 cup diced onion (1 medium onion)
1/2 cup diced green chili (2 chilies)
1/4 cup diced celery (1 stalk)
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water

1. Brown the ground beef in a skillet over medium heat; drain off the fat.
2. Using a fork, crumble the cooked beef into pea-size pieces.
3. In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat. Cook, stirring every 15 minutes, for 2 to 3 hours. (http://www.topsecretrecipes.com)

OMG! What wonderful variations I'm reading here! Vinegar? Cinnamon? Hmmmm..... I get the feeling I'm getting those "secret" recipes here! Thanks so much! I'm on my way to the basement pantry to get my beans & then I'll start. I like cooking something like this (& sauces) a good part of the day..seems the flavor is better the longer it simmers!

Cornbread sounds great as a side too! YUM!! Wish it were dinner time already!!!
 
jenjie - that is the recipe that I use too - with some modifications to suit our tastes. :)

(The vinegar was added because of the OTHER Wendy's recipe that is our there that calls for onion soupd mix - I think that there is some vinegar in it.)
