I was given 20 lbs. of Potatoes...HELP!

I was given 20 lbs of potatoes and I am looking for recipes to use them in. I already do potato soup and baked potatoes.

What recipes do you have and recommend for potatoes? If you can post your recipe that would be very helpful too. Thanks.

I like to slice them thin and layer them with cheddar cheese and mild chilis and/or peppers. I'll put them on the grill wrapped in foil, but you could bake them as well.

Honestly, 20lbs wouldn't last long in our house :)

Make sure to store them in a cool dark place and get them out of the plastic bag if they are in one. I have been storing my potatoes in mesh bags to allow air to circulate.

If stored properly they have a chance of lasting longer.
 
Soup. Don't have a recipe but I bet others do. It is still chilly enough to enjoy it.

I use potatoes instead of eggs to make omelets. Shred the potatoes with a coarse cheese grater, like you're making hash browns, add a little salt & pepper, and use in place of eggs in an omelet pan. I love the texture and crunch the lightly browned potatoes add, and they go with anything so you can fill with whatever cheese and veggies you might have on hand.

Another thing I do is pan fry cubed potatoes with ground sausage, peppers, and onions (and if I have them, eggplant, zucchini, etc. - it is a "use up the garden" sort of recipe in my house). You can season it differently depending on the sausage you're using. My kids' favorite varieties are mild Italian sausage with chopped basil and garlic and chorizo with cilantro and a little salsa or seasoned canned tomatoes.

And of course, this is still a great time of year for slow cooker roasts and stews. Beef stew, corned beef, etc.
 
Get a big aluminum baking pan.

5lbs. potatoes, sliced thin

1 1/2 lbs American cheese, sliced thin at the deli

1lb bacon

Two large (the really big ones) cans tomato sauce, with one can of water added

One large onion, sliced into thin rings

Layer in pan as follows: sauce, potatoes,onions, cheese, bacon. Repeat until the pan is full to the top. Cover with tinfoil and bake one hour at 350. Uncover and bake an additional hour.

This recipe doesn't really have a name. My grandmother called it "Poor Man's Dish." It's delicious, and is good heated up the next day as well. :)
 
Mashed potatoes freeze very well. I would mash them, portion them out into containers, then pop them in the freezer for later.
 
Twice baked potatoes .... oh so good!!!

"Bake" the potatoes whole in the Microwave, cut them in 1/2 and scoop the insides into a bowl - set aside the skins

in a pan -
Cook some bacon until crisp
sweat some onions until translucent
add in a small block of velveeta cheese and melt
add in a 16 oz. container of sour cream
Salt and Pepper to taste

melt this all together until it's ooooey goooey goodness and then mix it back into the Potato insides that you scooped out early and then mash them as if you were making mashed potato's ....

Now take that filling and scoop it back into the skins and top it with some Paprika, place them on a baking sheet and toss them back into the oven for 15-20 minutes or until GBAD!!!

Cut up potatoes in chunks or cubes 1/2 to 1 inch. Shake in a bag with olive oil seasonings (garlic salt, herbs, spices, whatever). Spread on pan and bake for 1/2 hour to 45 minutes at 400 degrees. I don't even peel the potatoes, very quick and easy.
 
Sounds to me that maybe you need to get a LOT more potatoes and head down to New Orleans for the Irish/Italian parade!!! We throw carrots, cabbage, potatoes... you name it. The day after the parade, nearly everyone is making some sort of soup with all the veggies they get from the parade :)
 
20lbs were given to you?

Maybe I need to try to give 20lbs of potatoes to my wife as a birthday gift. We'll see how fast I get hit in the head with one of them.

It's been mentioned here already but I'll put in another vote for soup. Clam chowder, corn chowder either would use up some.
 
My husband has been begging me to make "Healthy Potato Lasagna" - so I might know by the end of the week if it is good or not. The amount of sausage seems a little "light" so will probably use more than that.

Ingredients

•2 links Italian turkey sausage - 3.5 oz each
•1 ½ cups chopped onion
•1 cup fat-free ricotta cheese
•1 teaspoon dried basil or Italian seasoning
•1/2 teaspoon garlic powder
•1 egg white
•2 cups marinara sauce, divided
•1 ¼ pounds thinly sliced Yukon Gold potatoes divided
•1 cup shredded part-skim mozzarella cheese, divided


Preparation


Remove sausage from casing and crumble into a medium skillet with onion. Cook for 10 minutes or until both are browned, breaking up sausage with the back of a spoon.

Stir together ricotta, basil, garlic powder and egg white in a small bowl. Spread 1/2 cup marinara sauce in the bottom of a 9-inch square baking dish. Place 1/3 of the potatoes in the bottom of the dish, forming a solid layer with no gaps. Drop 1/2 the ricotta mixture in spoonfuls over the top and spread out just a little. Sprinkle with 1/3 of the mozzarella and 1/2 the sausage mixture. Add 1/2 cup more sauce then repeat potato, cheese and meat layers.

Top with the last layer of potatoes, remaining sauce and mozzarella. Cover with plastic wrap and make a small slit to vent. Microwave on HIGH for 30 minutes or until potatoes are tender

Another recipe we like is Creamy Scalloped Potatoes These are the best - they have asiago cheese in them. Far better than any other scalloped potatoes I have had.

I would also look up potato pizza recipes. Sorry I don't have one, we just have a neighbor who is vegetarian that brings that to neighborhood functions. It is very good! Just can't help with a recipe.

THIS....we do it all the time and eveyone loves it. We also love them with Parmesan cheese and garlic. I do line my pan with foil and spray good with pan as they tend to stick sometimes.
