Mooresville is near Lake Norman, and there is some public access if you are interested in swimming. There is a dinner cruise (can't think of the name, but I'm sure the chamber of commerce folks can tell you). There are a lot of car shops, including some that can be toured, in both Mooresville and Concord. There's a car musuem near the speedway (about 20-25 miles from Mooresville) and you can do tours of Lowe's Motor Speedway that include a ride around the track in a van. Depending on when you are coming there may be a dirt track race going on. Also, 20-25 miles away the minor league baseball team that Dale Sr. got involved with right before his death, the Kannapolis Intimidators, plays. In Kannapolis, there's a very small museum focusing on the town's two claims to fame, textiles and Earnhardt, both ironically now gone. You also can see the bronze statue of Dale that got Teresa so upset -- she threatened to sue the city even though Dale's mom and sister were on the committee that planned the memorial. In Charlotte, there's a science musuem with an Omnimax theatre that is now showing a NASCAR film as well as an art musuem and history musuem.
