Here is mine.
Mexican over Rice...
Start your rice...
Then, in a skillet
Brown some good Ground Round (like burger patties, then chop into chucks)
diced (or small strips) onion and green pepper
Garlic
Chili powder
(I sometimes add just a bit of extra cilantro and cumin)
then when it is almost cooked done,
add diced tomato (not a lot..)
Then add maybe one cup of cold water with a tablespoon of corn starch to thicken
Once it is thickened it is ready!
Rinse the rice just a little so it is not too sticky... Drain really well
Then put the rice on the plates
Topped with the Mexican beef
then a handfull shredded mild cheddar (Sargento)
Yummy!!!!

There is a lot of variations out there, but when it comes down to it, cream of mushroom soup and beef is good eats!
