They take credit card? I was so sad when I had to write a check for our house painting.
Our house painter's website said he would take a cc. Then, when it came time to pay, he said he never set it up. I had to write a very painful $3,500 check. I'd applied for a CIP back then too knowing I could use the painting to meet the spend.
 

We’re all done with our LEGO sets! It was a great way to pass the time. Now that we’re done I think the baby needs to come lol

So I made injera today. It came out absolutely awful! However, I think I have a good idea of what I did wrong and I will try again next week. I am determined to make injera with doro wat!

We've made injera a couple times before too. It's supposed to be awful! It's fermented teff. We also have a big container of berbere we bought from a local Ethiopian market and we made lentils this week, they are delicious.
 
Would you mind sharing the recipe -- I need something to try next week! I have baked bread and rolls the old-fashioned way, so I am comfortable with the process.
Long Sponge sourdough
sponge:
1 cup starter
1 cup water
2 cups flour
Mix all well,cover with damp cloth,set in oven with light on overnight.

in A.m.,add to sponge
1/2 cup honey (can sub sugar too)
2 Tbsp melted butter or oil
1 1/2 -2 cups flour
1 tsp. salt

Mix well, turn onto floured surface,knead for a few minutes- return to oiled bowl,turn once to coat all sides- place back in oven to rise until doubled(approx) about 2 hours.

Turn on onto floured surface,punch down,knead for a minute or two. place in two oiled loaf pans (or one large loaf) back in light/oven,let rise again for about an hour (or so)
turn oven on to 350,add small pan of water(I like it for the crust) and bake for approx 50 mins, till loaves are golden. (remove small water pan after 15 minutes)
This is actually a very simple thing to do, once you get into the timing of it all.
The only issue I had with this recipe is how fast it disappeared...
and obviously not a problem with the times bc I'm not going anywhere anyway.....
 
I jumped on the sourdough bandwagon this week and have a very novice question about the “feeding.” When you say you feed it once a day, does that mean everyday you’re adding 4oz of flour and water to your starter. Do you also discard some of the starter at feeding time?
I’ve been watching videos online, but there doesn’t seem to be any consistency to the various methods.
When I feed mine, I give it somewhere between 3 tsp- 1/4 cup of flour,and a bit less in water. (always filtered) I don't discard unless it's outgrowing it's jar. I keep it in a quart size mason jar,that way I have enough on hand for a recipe when I want it. and also why I mostly keep it in fridge,bc I dont' want to use that much flour daily if I'm not baking with it daily.
 
Working on booking flights for our August Disney trip (think all of the positive thoughts with me)...just need someone to confirm for me that when flying southwest with a lap infant we just need to take said baby and their birth certificate to the counter for a boarding pass???? I was planning on using our frontier credits for the return flight but the only flight they have that day has a layover in Denver. Yes. From Florida to Colorado to Michigan. 🤦🏻‍♀️

I don't think you necessarily need the birth certificate, although probably doesn't hurt to have. I don't remember bringing it when we flew with my DS but that's been 6 years ago so hopefully someone with more recent experience can chime in.
 
I have an off topic question. I have some flex tickets saved and assigned on MDE. The box up top says Valid Through 1/14/2021, but when I scroll down to the text it says "The first day of use of your ticket must be on or before December 31, 2021." So which one is the actual expiration date? We had to cancel our May trip, and I really don't think we'll be able to go until next May. If I let them expire, I know the value can be applied towards new tickets but is there anything I need to do to be able to find the tickets later? I believe I read that they disappear off MDE after expiring?

We flew SW in 2018 with my son once as a lap infant and once with a paid seat. As a lap infant, the check in agent asks to see birth certificate. As a paid ticket, they didn't ask for anything.
 
I’m jealous that Costco by you has KAF. I can only buy 5# bags and usually only at Target
I always looked at the 25# bags longingly - they are cheap compared to the 5# bags, but never bought one until there was no flour in any of the stores (you can now find the 5# bags in most supermarkets near me again). But since we got through the first 25# pretty easily, and we are going to be home until at least May 20 around here, I went for a second 25#!

I've been feeding at the 1/4 cup rate, but I have been discarding. I adjust to feed more if I know I've got a use for the discard coming up. I've been using discard it in various ways - adding it to whatever bread I'm making (unfed, not relying on it to rise, just as a flavor add), I dipped chicken strips in it and dredged them in panko breadcrumbs and made chicken cutlets (they were yummy!) and I just mixed up a sponge to make sourdough waffles for dinner. That used a full cup of starter, so I fed with 1/2 cup flour this time. Have the starter on the counter now, going to feed a bunch today and tomorrow and try for a batch of pure sourdough boule this weekend - if it doesn't rise right, I have 25#s of flour to make something else :rotfl:
 
I called Delta Vacation to change my flight since they are offering one free change on flights. I added a day to our Utah trip returning July 5th, which means I added a day to our rental car too. I will be getting a Delta Vacation voucher for $1199 for adding a day.

The closer we get to the travel date the less likely I think it's going to happen, I did buy travel insurance so I still have the option of cancelling the entire trip.

Do you happen to know if Delta Vacations is offering to extend expiration dates of the vouchers? I have a few expiring August and I don't think we'll be able to use by then.

I called to ask about extensions about the one I have expiring in March. I was told they aren't offering extensions but that I didn't have to use the voucher by March, I just had to make a future booking by March. Doesn't hurt to call and ask what the options are.
 
The one they are issuing me doesn't expire until 12/31/2021, I'm not sure about already issued vouchers.
Interesting. When I called to cancel our Spring Break trip, they said I could rebook by 12/31/2020 without the insurance or 4/1/2021 if I used the insurance. I ended up using the insurance for the later dates. I still have our Italy flights to cancel but I am waiting until closer to June. The Delta credits just keeping accumulating!

It's my Friday at work, so chugging along ready to get home! It's mine and my husband's 15th wedding anniversary! :yay::yay:
We are going to order a meal from Texas Roadhouse for tonight to celebrate.

We have some bananas that are starting to ripen here at work leftover from 911 tele-communicator week from our Ice Cream bar that I set up. I'm going to take home and make banana nut bread with.

My daughter and I want to try acrylic paint pouring for our next art project so I spent some money online with Michael's. If you don't know what paint pouring is, check it out on YouTube. It looks messy, but will be a fun distraction.
