I just got the Ball Salsa Making Kit for my birthday this weekend.....

Any good salsa recipes out there? I like mild salsa and I would love to make my own! We are growing peppers and tomatoes in the garden, so we can make it very fresh! Also, does anyone have any experience with jarring salsa and keeping it for any length of time? I thought it would make cute Christmas baskets to give out.

I have a great recipe for fresh salsa but...Someone once told me you need to have a recipe with vinegar in it to keep it for any amount of time. This must be true b/c the one I make tastes good for about 2 days and that is it (of course we usually eat it all by then anyway!) I love to can, I usually make apple butter, pear honey, fig jam, and last week I made 16 jars of pickles! If you find a good salsa recipe for canning, please share, I'd love to have it.
