that 75% of daily food consumption should be vegetables!!!

I agreed with most of the stuff she said (go organic, no hyrdrogenated, minimal processed foods, etc), but I dont know how I feel about 75% vegetables.....and this is coming from a veggie eater!

What do you think?

Just vegetables or Fruits and vegetables?

I might agree if she said fruits and vegetables......

I'm interested in this. I've been looking at some of the spring vegetables and am amazed at the nutrient content. Perhaps if the proper combinations of vegetables are on our plate that might be the way to go. Interesting...

She actually said "VEGETABLES!" not fruit and veggies! Since I heard this last week I've been aiming for 50% veggies and have been stuggling w/ that! I figure once I have the 50% thing down I'll try to move to 60%.

I think I could do this... and I can see where it would definitely help..

What I am wondering though..is if this would result in enough calories?

Did she give any suggestions on what the other 25% should be to fill you up??

My diet is about 75% veggies. AND I LOVE IT! YUM!

I eat oatmeal for breakky [lots of tea & water during the day too]

Veggies for 10am snack.

Lunch is usually a healthy veggie sandwich with a slice of low cal cheese.

Veggies for 2pm snack [if I get to it....sometimes I'm too busy]

Dinner is generally something veggie, maybe a little chicken with it. I don't love red meat.

8pm snack is blueberries.

I like seeds and nuts for snacks too, but limit them because of the fat. I eat 20 grams of fat a day....never trans fat, that is poison....I avoid saturated fats too.

Three to four times a month I increase my calories for a day or two [by about 200 calories] to kick my metabolism up. I treat myself for birthdays and special occasions.

I also change my exercise routine occasionally to help my metabolism.

Sandra,

When you have dinner is it just veggies you eat or is it like a vegetable dish?

I'm a pescetarian (I eat fish but no other meat) and so we do have alot of veggie only dishes..but I am wondering if there is still too many carbs and fats that I pair with it to really help.

At the same time though..I worry that eating mainly just veggies will make me really hungry all day...

I believe that it's possible to have a diet consist of 75% vegetables. Does this include beans? It's grown - so it's technically a vegetable. Not sure since you wouldn't consider wheat like oatmeal or rice/quinoa a vegetable even thought its grown. Hostically, anthing that you eat that is natural from the earth and is minimally processed is much heathlier. I think fruits could be considered in that too.

If you were to study the combinations of protein in plant based foods you would see that there are lots of ways to come up with complete proteins. Where you have a harder time making up the vitamins are the ones that are mostly in meats like your B vitamins. Its much harder to get certain vitamins from plant based foods.

You could do some research on vegetarianism and ways to eat like that while still fullfing your nutrional requirements.

Definately when I"m eating healthy I prefer to eat a lot of vegetables and a lot of time pick vegetarian meals. There are a lot of healthy yummy things out there without meat.

hhhmmmmm....let's see. Well, I always like a big hardy salad with fruit mixed in. Veggie Chili is good too. Veggie stir fry [using 1 tbsp of olive oil], Hardy veggie soups & stews with adventurous uses of spices [visit your Bulk Barn and smell the spices....you can use them in ANYTHING and they are FREE calories], Using a measured amount, I sometimes blend in whole wheat pastas or rice in my veggies for a nice pasta primavera. Measure low cal cheese and make a yummy lasagna. A can of whole tomatoes with spices and a cup or two of frozen veggies cooks up to a hardy and yummy meal. Tomatoes are AWESOME for you!

I'm not the biggest fan of "meatless" foods like hot dogs, burgers etc.,. If you read the labels, the ingredients aren't usually that good for you.

I like tuna in a can and chicken, so I opt to use them in dinners or lunches too.

Blessings, Sandra
