I am going to disney in October with my family, and in-laws... I will be participating in the DDP. My in-laws are not, and not staying at Disney. They will be dining with us a few nights however. Do you guys know if I'll be able to book them as part of the number included for reservations as well? For the 180+10??? Meaning, can I include the number of people in their party with my party when making reservations.

I don't see why not. If you are making ressies online, the system doesn't link your resort party size to your dining reservation size--you still have to type in your dining party size when making your ADR.
