I hate meal planning!

I actually wrote down every meal that I know how to cook then made up a meal schedule. I can usually plan out at least 2 months worth of meals (including leftovers) when I sit down and do this. Makes life much easier, just pull out the calendar and know what you are making for dinner.
 

Yes, so do I! And it's only me & dad, but he won't do the planning. I have to ask him every night "what do you want?" I'm so sick of it.
 
I also plan my meals weeks in advance. That way, I know its not meatloaf on Monday, chicken on Tuesday, etc. About 2 year ago, I just sat down one day and went through all my cookbooks and started planning.

That is such a good idea! I bet it makes shopping a lot easier too. What do you do when an activity conflicts with the schedule? Do you keep some staples (read frozen foods) in the house when you just don't feel like cooking or your SO has to cook for one reason or another.

My mother and one of her friends did the cook in one day, eat for a month thing. They packaged and froze everything and all they had to do was warm it up in the microwave or in boiling water. Cheaper than cookign every night too.

I need to get on the sitck and take some of that advice.

I make my menu a month at a time because I hate thinking about it so much. I get it done in one sitting. Blah.

I like the idea of writing down everything you know how to make. That would be an easy way to make the menu, just spread the list out over a month. :p I hate cooking too, LOL.
 
Maybe I have such a hard time because I hate cooking and I really don't know how to plan a proper meal (I am bad at remembering to make veggies.)

Anyone want to share there favorite meals? I need 31. ;) :p
 
One of my fovorites is quesadillas:

Chop veggies (I like peppers, onions and mushroms), sautee until they are like you like them.

Cut up chicken breast and sautee until done.

Spray quesadilla wapper with cooking spray, put in nonstick pan, top with cheese, veggies, chicken and with another wrapper. Spray top with cooking spray.

Flip when first side is browned, brown second side.

Garnish with taco sauce, guacamole, sour cream, black olives, lettuce - whatever you like.

Then you're done.

I like these because I can omit the veggies and sometimes the chicken for my little ones.

You can use the leftover veggies and condiments for tacos later in the week.

Jenn Lynn--You are too funny about needing 31!! If you actually write down everything that you know how to cook, you will be surprised how much you knowhow to cook. I have learned so many different ways to prepare Chicken breasts. Living in TX now (we used to live in WI) I can cook out all year round, so brats and Chix on the grill are on the menu every month.

mickeyboat--I can do a months worth of shopping at a time. I still need to go to the store weekly to buy the essentials like milk and bread and also the veggies that gop bad quickly. I do not always stick to the schedule. If we have something going on or something comes up, I usually take the meal for that night and add it to the last day of the calendar.
 
Everyday for a family of 8 - YES!!!!!!!!!!!!!!!!!!!!! I HATE IT!!!!!!!!!! It's quarter to five right now and I still don't know what I'm making!! LOL!
 
I'll share one :)

Runza's
1pkg. frozen bread loaves
1med. onion chopped fine
2T butter
1/2 lb. ground beef
2 cps. chopped cabbage
1/2 t. salt
Preheat oven to 350

Thaw bread loaf. Brown beef & onion in butter. Add salt, pepper, & chopped cabbage. Cook until cabbage is just tender stirring constanly. Remove from heat and let cool a few minutes. Cut thawed loaf into 6 in. squares. Place about 3T filling in cneter. Fold each corner to center. Pinch edges together & place smooth side up on greased backing sheet. Let cook 20 minutes. Remove from oven & oil Runza tops in desired. Serve either warm or cold. :)

Oh, you sound just like me! I don't mind the cooking, but I never know what to make, and I also tend to forge the veggies. I need someone's meal planner too!!

I know. :) I just need to get them all on my computer. I hate leafing through cookbooks trying to remember what we liked.
 
Since I know you have mentioned trying flylady, have you tried her menu mailer? I've considered it, but I am reluctant. I have a family of picky eaters---including me :)
 
How do you buy fresh fruit and veggies for meals a month ahead of time?

Well I like salad so I get the precut salad in a bag and add avacados, tomatoes and cucumbers. This can be a meal is you cut up a few chickem breasts and toss it all together.

But as far as veggies go, I always remember because I love veggies. But, if you want easy, buy frozen veggies, like peas and corn, or peas and carrots, broccolli, watever. Put them in a bowl, cover with water, throw in the micro for five minutes and strain them. Easy. :D
