I did it!!!

After three years of blood, sweat and tears, I have officially lost 60 lbs!!! There were times when I really thought I was crazy and that I wouldn't be able to do this. But today I stepped on the scale and there it was my goal weight. My first thought was I need to buy some cake to celebrate

If you want cake, go for it! Make a cake mix with diet soda. Then, bake it as cupcakes so that you can freeze all but one or two. Add some FF cool whip & enjoy! You deserve it!

Another version of cake is to use boxed cake mix and a can of pumpkin, then bake as cupcakes according to box directions. I LOVE this made with either spice cake (my favorite) or something like double- or triple-chocolate fudge cake mix. They come out SO moist and freeze very well, so you could have a little bit of cake whenever you want.
