Does the location of the restaurant matter at all? I would imagine that if you will be in a specific area that day, you may want to pick something a little closer to where you are just for the sake of being time-effective.
If you are in DHS, Brown Derby is good for 2TS credits and if you are willing to stray from the park and go to the Boardwalk area, I would HIGHLY recommend Flying Fish for 2TS, we went for the first time in 07 and loved it.
If you are in Epcot, I would recommend Les Chefs for 1TS credit or again, if you are willing to stray...the FF or Yachtsman for 2TS.
If you are in AK, Yak & Yeti for 1TS or Jiko for 2TS all the way. The food is a little different, but maybe your DH will be willing to step outside of the box. Does he like chinese food? If so - Y&Y wouldn't be a huge departure at all. If you are adventerous, Jiko has some things you would probably like and there is always the Filet and Mac n'Cheese for DH.
If you are in MK I would definitely leave the park. I don't think the dining options within the park are anything to get excited over. CG for 2TS is great if you want to get a view of Wishes. Narcoosee's in the GF is also supposed to be one of the best (I haven't been). Or last but not least, Artist's Point is probably a good one at WL if you haven't tried it out.
The beauty of all of the restaurants is that no matter how "out there", there is probably something for everyone. Most restuarants from San Angel to Coral Reef to Jiko to Yachtsman all have steaks, potatoes or something similar for those that are more tame eaters and extremely interesting selections that most of us would never find at home for those of us that want to live a little.
