We go often during the last two weeks in August. It's moderately busy. we've never waited an hour for a ride but it's definitely picked up with free dining. No where as crowed as full summer though.
We were there the week before labor day and crowds were managable. We could do everything we wanted to in MK before noon and then take in the things we rarely do like parades, Laugh Factory, Hall of Presidents, Tom Sawyer. Same at AK
DHS always ends up feeling crowded because of the layout and TSMM
ETA - we did mostly signature restaurants but there were plenty of open tables. Even at WCC it wasn't crazy busy.

We go the last two weeks of August as well and would never wait for an hour for any ride. With fast passes we have never waited for more than 20 minutes. I find the restaurants are a lot busier than the parks....
