How to plan a late day in the parks?

From reading here, I realize that it is important to arrive at the parks early. BUT... I know that our first couple of days we will go, go, go. We are not late night people, so staying up "late" to watch fireworks two nights in a row will get to us I'm sure.

I'm wanting our 3rd day to be a little more lax. We will have 8 park days so I feel like we can kind of "waste" a day or two. I would like to start our 3rd day by eating at Kona Cafe (after looking at the menu, I actually want to start and end everyday there!).

So, if I have an ADR for 9:05 at Kona on July 5. EasyWDW says Epcot and AK are green days. We plan on visiting Epcot and AK the previous 2 days.

Any ideas of what we should do? I would like to keep our ADR. And possibly visit a park, any park, but would it be worth it? I'm thinking I should look into FP+ for that day?
 
I think this is the kind of day where FP+ will be awesome. Schedule your favorite rides, and plan to check out the shows while the crowds are at their worst. That is usually a really crowded time of year, but that just means more shows/entertainment (and better ppl watching)
 
You should plan FP+ EVERYDAY, no matter if you start early, start late, only plan to be there 2 hours, etc, etc, etc. At the moment you only get 3 per day so at least for those 3 attractions plan to wait less!!

I would lay out the park hours for the week and see which parks are open early or late and on which days for EMH. See how late they are open the night before and pick a park not having EMH the day you want to visit. Pick a park that was open late the night before so you will have less chance those guests will also return to the same park for opening the next day.
