Can someone explain what exactly the process is at Gideon's and what my best bet is to get some of those delicious looking cookies? I've been doing my research but I'm feeling confused. Is there some magic day of the week/time of the day I should go? How long do the lines really get, and do they actually sell out? Do I HAVE to go first thing in the morning? What about the virtual queue? Is that still a thing?
 
Easy. Show up. Wait. Enjoy theming. Purchase pricey treats. Return to hotel room. Eat til food coma sets in .....

Seriously, I don't think there is a definitive answer to your (implied) question of the best time to go. Sometimes there are long lines, sometimes the wait isn't too bad. My partner has waited in line (for about 90 minutes) when DS opens. We have also done the virtual line in the morning and the afternoon (getting the callback as soo as thirty minutes ater joining the list and as long as four hours after joining the list). Once the standby line gets too long, the employees will direct you to the virtual line registration. I do think the wait tends to be longer later in the day, but morning wait is no picnic either.

The only items I have seen them sell out of are the monthly specials. For the basic stuff, it seems they have a good handle on how many they need to bake and I have not had those sell out on me. Also, don't overlook the cakes. They ar as good or better than most of the cookies
 
I can tell you what I did when we were there in October. Once we arrived at DS, we made a bee line to Gideon's. There were 2 people working out front and were taking names for the virtual que. Gave them name and phone number. About 3 hours later we received a text that we may arrive to get in line at Gideon's. We waited in line (starting outside) and it was about 20 minutes until we made it inside and another 10 minutes to place an order. We put our names in around 3:30 p.m. and got text about 3 hours later. This was during the weekday. The people working there said the weekends are even busier.
 
In December we got there shortly before they opened on a Tuesday, and waited maybe 30 minutes. Cookies are amazing, and their peanut butter cold brew is to die for.
 

I’ve gone twice, both times on the weekend. We checked in shortly after 10am and both times the wait to return was 3 hours. So we go and have lunch and shop. Once the text comes you go and join the line outside which was around 20 minute wait. You don’t have to return immediately if you’re unable to like if you’re in the middle of a dining reservation or something. When we went the second time the coffee cake cookie was sold out which was disappointing
 
After 4 trips I was finally able to go inside in January. There wasn't a virtual que but a short line outside. There is a small queue inside that provides time to review the menu. I bought 6 cookies and they were amazing.
 
Since it is in a shopping area, typical slower times are what you would expect: non holiday weekdays and mornings are faster than holidays, weekends, and later on in the day. Get there at 9:30 on a weekday and you’ll be out of there by 10:30. Go a holiday weekend Saturday at 5 or 6 and the virtual queue might be closed for the day or when you get called back 4-5 hours later they could be sold out of what you have your heart set on. We usually try for morning because the Coffee Cake Cookie (think snickerdoodle) is far and away my favorite and it is morning only until sold out.
 
We have joined the virtual que three times over the last 6 months. We joined the que around 5:00 or 5:30 PM on weekend evenings. Were told the wait was 3 hours each time. Shopped, went to our dinner reservation and all three times the wait was shorter by almost an hour- we might have just been lucky all three times. I think people get on the list and then plans change and they don't show up when they are texted. My advice is to always get on the list no matter when you arrive in Disney Springs, you never know, the line could be shorter. Good luck the cookies are amazing!!
 
We were there 2 weeks ago.....our first attempt was on our arrival night and there was a 4 hour virtual line--it was a Saturday. On Tuesday, we decided to go over in the afternoon and we only waited 10 minutes in an outside line.
I am curious about this. We went a little over a week ago. We got there right at opening and waited close to an hour. After lunch, we walked back over, and there was a short line outside the door. I wondered if these were people who were returning via virtual queue, or if they were people who just walked up. If they had just walked up, it might be worth it to get there a little later. (Of course, that coffee cake cookie was so delicious, it might be worth the hour I waited!)
 
The advice others have given you regarding average wait times & the virtual queue is golden. (As is the comment about the peanut butter cold brew: goodness, is it delicious!)

I wanted to add that there is another Gideon's location in Orlando with lesser wait times if you don't want to stroll in the hot sun for a few hours waiting for it to be your turn to stand in the physical line.
 
My experience - Last Monday in June:
Arrived as most stores were opening, went to WoD and Lego before heading over to put name on list at Gideon’s about 10:30 am with estimated 35 minutes for return. Received text to join line within 10 minutes. Line was about 15-20 minutes outside and 5 minutes inside.

The outside line are people returning for the virtual que, there’s a sign mentioning it next to the line. I would guess if there was no virtual line that sign wouldn’t be there

I didn't notice a sign, but maybe I didn't know to look for it.

Can someone tell me what would be the latest to get there in order to get the coffee cake cookie? I'm wanting to redo my strategy for my fall trip. I would love to get there a little bit later--like maybe around 10:30 or 11:00--and utilize the virtual queue so that I can go eat and return for my cookies after lunch. But I don't want to chance missing that delicious cookies!

I’d recommend going on a week day. The first time we checked in around 11 and got called back around 1 and I got one. Second time we checked in at 10 and got called back around 12:30 and it was sold out. Both were on a weekend

This is all good information. We went on a Friday of a holiday weekend and were able to get one. Next trip, it will have to be on a Saturday. I guess I need to plan to get there early.
 
Was there feb 22nd. (tuesday 11:30 am) line was to the corner of moromoto asia (probably 40 people deep.) , there was no virtual que. it took about 25 minutes to get inside.
 
Personally I would avoid weekends, both times I have gone on a weekend, i've been in a virtual queue. One 5 hours, one 3.5.

I was there a week and half ago on a Tuesday about 11:30, 20 minute wait. Weekdays are the way to go for sure.

Now a question for the thread, I've had the dark coffee cake cookie, which is served in the evening, but not the regular coffee cake cookie. I thought the dark coffee cake was good, but not as good as their choc chip or peanut butter. For those who have had both, is the regular coffee cake cookie that much better?
