We haven't been to WDW for seven years and all this is new to me. We are a large family split up into three rooms so how do we do our FP so we remain together as a group?
FP+ has nothing to do with the number of rooms that you reserve.
You can book FP+ for your entire group, even if you are the only person booked at just one room at a WDW resort.
Just make sure every one of your party is either on YOUR MyDisneyExperience account, or if some of them have their OWN MDE account, they are LINKED to your account.

Doesn't go by rooms, it goes by having everyone registered in one My Disney Experience so that one person can try to book everyone as a group at one time.
