We are planning on arriving and staying at CSR on December 14th and leaving on December 20th in the morning. We have 5 day park tickets and are on the DDP. I know we will have the dining credits for the days in the park, but will we have a dining credit for the day we arrive or for the morning we leave?

Credits are per night, not day. You're staying 6 nights so you have 6 QS, 6 TS and 6 snacks per person to use during your trip. They can be used on any day you wish.

As PP mentioned you have 6 of each type of credit, per person. They will be active as soon as you check in, and are good until midnight the day you check out. So you can use them the day you get there, and can use them the day you leave, you just have to calculate how you want to do spread them out. If you use one TS each day from your arrival, then there will not be one left for check out day, since that will be your 7th day technically, and it is based on your nts. You can do a day with no TS, and then have one left for last day, or pay OOP for your cheapest meal during the week to have one extra. We usually pay OOP for CP brft as our cheapest meal, so we have one extra or can do a 2 TS meal.

You can use 2 TS one day, and 2 QS another, it is all up to you - it is a total number of credits on your account, so you use as you like. You can also split QS meals if everyone is not that hungry, you do not have to use 1 credit per person every time, unless it is a buffet. Even if you do a sit down meal, and someone only wants to have an appetizer or a salad, you can pay OOP, and save the TS credit for later, to get the most out of the plan. Often people end up having snack credits or QS left at the end of their trip, and buy snacks for themselves or for little gifts for family with their leftover credits.

We might. It will be my myself, my wife and our ten year old son there. It will be our first time going. We are going to reveal it to our son this afternoon after school at our travel agent's office.

Dining credits don't have anything to do with your tickets or how many days you spend in the park. They are always allocated based on how many nights you are staying at the resort.

I just found out about this site that calculates all your DDP credits vs planned meals to tell you the best use of credits. Even though it's not technically related to your question, I thought it may be helpful for your planning. I'm pretty excited about it, and I'm very well versed in the dining plans.
