After getting a price estimate for our trip (we aren't planning to go until ear;y 2016 so I'm sure it will be a bit higher), how much do you think would be appropriate for spending money?

We are planning a 9 day trip.
Either 5 or 6 of those days will be in the parks. (2 in MK, and then one in each of the other parks [and if we decide to spend 6 days in the park then we will spend an extra day at another park - any suggestions?])
2 days will be travel/relax days (at the pool/whatever depending on flight time)
1 or 2 extra days will be spread out during the trip for relaxing as well (exploring the resort, pool, DTD)

Flight, hotel and the dining package are factored in to our expenses already.

How much do you think is good for spending money? It will be me, my husband, and our 2 daughters (who will be 6 and 2). Just trying to set an appropriate budget so we can figure out how much to save each month. We want to splurge since this will be one of two trips we plan to take during their childhood (the next one most likely being in 2019 when they are a little older).

The most obvious answer is that everyone is different with different values and spending habits. But what ever you think you'll spend, triple it. That might cover it all. We've gotten it down to doubling our estimated budget. Hahaha. But seriously, if your plan is to splurge, then save as much as you can and don't set a budget. The amount is what it is to have a great time.

How much will a gallon of gas cost in two years? Or a loaf of bread? Or a cup of coffee?

You're not only asking people to somehow predict your spending patterns, but also forecast what prices will be in two years. That isn't going to happen with any kind of accuracy. The best advice is what the PP said...save as much as you can and then set your budget accordingly.
 
I always budget $150 a day. Some days we spend more, some days much less.

To be comfortable, I would probably bring about $2000. Anything left over goes right to our next vacation anyway and I am that much ahead of the game.;)

Good for you for saving up now!! I'd look at your monthly budget and see how much you can save without it being too painful. Can you do $50 a week? $10 a day?

$50 a week is $2600 a year. You could create your own money challenges to save additional cash. Does it cost $3 to dry laundry in the dryer? Use the clothesline and put $3 aside. Make a pizza instead of takeout? Put the difference in the bank.
